These vegan steak bites are made from soy curls — whole, dehydrated soybeans that we rehydrate in a flavorful vegan beef broth. They’re made with simple ingredients, high in protein, and naturally gluten-free, making them a great plant-based steak alternative.

Why these make a great Vegan Steak Substitute

This soy curl steak has a wonderfully juicy, slightly chewy texture and hold sauces and seasonings beautifully. They’re an excellent gluten-free vegan steak substitute in recipes that call for steak tips, steak bites, or beef strips.

Vegan Steak Bite Ingredients

Soy Curls

Made from whole dehydrated soybeans, they’re super easy to use, high protein, and gluten-free. I buy them in bulk and use them in just about everything.

Vegan Beef Broth

I like Better Than Bullion No Beef Base.

Miso Paste

You can find this in the Asian foods section of most grocery stores. It adds a nice savory, salty, umami flavor. We’ll be using white miso paste for this recipe.

Gravy Master

You can leave this out if you’d like to. This just gives your Vegan Steak Tips a nice brown steak color. If you don’t use it they’ll be similar in color to grilled chicken.

Vegan Worcestershire Sauce

Make sure you use vegan Worcestershire sauce. Most Worcestershire sauces have anchovies in them.

Liquid Smoke

This adds a little bit of smokey, grilled flavor to your vegan steak bites.

How to make easy Vegan Steak Bites

  1. Rehydrate the soy curls.
    Add the whole bag of soy curls and 3 cups of warm vegan beef broth to a bowl. Let them sit for about 15 minutes.
  2. Drain and season.
    Drain any remaining liquid, return the soy curls to the bowl, and add:
    -2 tbsp miso paste
    -2 tbsp Gravy Master (optional, for color)
    -1 tbsp vegan Worcestershire sauce
    -1 tsp onion powder
    -1 tsp garlic powder
    -1 tsp liquid smoke
    -Salt and pepper to taste
    Mix well.
  3. Cook
    Preheat a large skillet over medium heat. Add the seasoned soy curls and cook for 15-20 minutes, stirring occasionally. I like to let mine brown and char a little, but you don’t have to.
  4. Serve or store.
    Serve with your favorite sauce, use them in recipes throughout the week, or add them anywhere you’d use steak tips.

They’ll stay fresh for 5 days in an airtight container in your fridge. You can reheat them in a skillet or the microwave. If you’d like to reheat them in the microwave, put them in for 30 seconds and then check them and add more time if necessary- they reheat really quickly.

Can I freeze vegan steak bites?

Yes! Freeze them in a single layer on a baking sheet so they don’t stick together, then transfer them to a freezer safe container. They’ll stay fresh for up to 2 months. Reheat them from frozen or thaw in the fridge overnight.

Ingredients
  

  • 1 Bag Soy curls
  • 3 cups Vegan beef broth warm
  • 2 tbsp Miso paste White
  • 2 tbsp Gravy Master optional, for color
  • 1 tbsp Vegan Worcestershire sauce
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1 tsp Liquid smoke
  • Salt and pepper to taste

  • Large mixing bowl
  • Large skillet

Method
 

  1. Add the whole bag of soy curls to a bowl and pour the vegan beef broth over them.
    1 Bag Soy curls, 3 cups Vegan beef broth
  2. Let sit for 15 minutes.
  3. Drain any remaining liquid using a strainer, then put the rehydrated soy curls back into the bowl.
  4. Add you miso paste, gravy master, vegan Worcestershire sauce, onion powder, garlic powder, liquid smoke, salt, and pepper, then mix well.
    2 tbsp Miso paste, 2 tbsp Gravy Master, 1 tbsp Vegan Worcestershire sauce, 1 tsp Onion powder, 1 tsp Garlic powder, 1 tsp Liquid smoke, Salt and pepper to taste
  5. Pre-heat a large skillet over medium heat.
  6. Add the seasoned soy curls and cook for 15-20 minutes, stirring occasionally.
